Every single year on Thanksgiving and Christmas, I look forward to eating dinner with my mom’s extended family because that means we get to have my Aunt Joy’s famous cinnamon muffins!!!! She’s been making these for most of my life, so I’ve been eating them as long as I can remember, and they are one of my most favorite things about the holidays.
Here’s how to make them…
Use It
Muffin Pan (I love this one that holds 12)
Muffin
Cups (paper or silicone if you prefer… that’s what I use!)
Cookie Dough Scoop
(I love this one… it’s so much easier/less messy to fill the cups!)
Buy It
1 box yellow cake mix
1 large box
vanilla instant pudding
4 eggs
3/4 cup oil
3/4 cup water
Cinnamon sugar
Make It
1.
Preheat
your oven to 350 degrees.
2.
Mix
cake mix, instant pudding, eggs, oil, and water together.
3.
Drop
enough batter in each muffin cup just to cover the bottoms.
4.
Sprinkle
cinnamon sugar very liberally on top of batter in each cup... and when I say
liberally, I mean, the more the better!
5.
Spoon
more batter on top of each muffin cup to complete the muffins. Be sure not to fill each cup more than 3/4 of
the way, because they get huge as they bake.
6.
Sprinkle
more cinnamon sugar on top… again, pile it on there… you really can’t have too
much!
7.
Bake
at 350 degrees for 15-20 minutes.
This recipe makes approximately 24 muffins.
