Hot Pineapple Casserole

Fall is right around the corner (yassss), which means that Thanksgiving and Christmas are, too, so I thought I’d go ahead and share this delicious recipe since it’s the perfect dish to take to any kind of gathering.  The recipe is going to sound a little strange – well okay, maybe a lot strange – but this is legit one of the most beloved side dishes at all of our family gatherings… especially on Brian’s side of the family.  As a matter of fact, I was introduced to this dish by my mother-in-law! 

We have it every single Thanksgiving and Christmas and it’s also highly requested for birthday lunches and other random celebrations throughout the year.  As I said before, the ingredients do not sound like they should go together, but this is one of those instances where the phrase, “don’t knock it until you’ve tried it” is fitting.  Just trust me…

Here’s how to make it.


Buy It

20 oz. can pineapple chunks, drained, reserving 3 TBSP of juice
3 TBSP all-purpose flour
1/2 cup sugar
1 cup grated cheddar cheese
1 cup butter-flavored cracker crumbs (about one sleeve of Ritz crackers)
1/2 cup butter, melted

Make It

1.    Preheat oven to 350 degrees.
2.    Place pineapple chunks and reserved juice in a greased casserole dish.
3.    Mix flour and sugar together and sprinkle over pineapple.
4.    Sprinkle cheese on top.
5.    Top with cracker crumbs.
6.    Drizzle melted butter over all.
7.    Bake for 55 minutes and serve hot.



It’s so easy to make it’s ridiculous, and when it comes out of the oven, it’ll be all melted together and gooey and wonderful.  It’s the very best when it’s served fresh out of the oven, but it tends to hold its heat for a long time, so you can easily bake it at home and bring it with you… it’ll still be just as good by the time you arrive at your gathering.

We eat this dish as a side, but it’s so sweet and delicious that it can almost pass for a dessert.  Almost.

  8. I made that casserole last Thanksgiving having never tried it before--it was a hit! I wasn't a fan BUT it was completely demolished by the end of the night haha!!!

  10. My husbands step grandmother gave me this recipe she told me it’s from the Methodist Wives club - I make it every Thanksgiving and Easter now
