Buy It
2 boneless, skinless chicken
breasts
Garlic powder
Salt
Pepper
2 Tbsp. cooking oil
Teriyaki sauce
Stir Fry sauce (we like Kikkoman)
Stir Fry sauce (we like Kikkoman)
1 red pepper, chopped
1 bunch of broccoli cut into
small pieces
2 Tbsp. stir fry sauce
1 can pineapple chunks in
natural juices
1 package boil-in-the-bag
brown rice
Make It
1.
Wash and trim chicken breasts, sprinkle both sides with
garlic, salt, and pepper, and cut into bite-sized pieces.
2.
Put cooking oil
in large pan and add chicken pieces to oil.
Cover liberally with teriyaki sauce and stir fry sauce and then cook chicken over medium
high heat.
3.
When chicken is
fully cooked, add red peppers, broccoli, stir fry sauce, and a dash of the
juice from the canned pineapple and continue cooking over medium high heat,
adding more pineapple juice if mixture starts to stick.
4.
Prepare rice in
a separate pot by following instructions on the box. (Mine usually has to boil for 10 minutes.)
5.
Once red peppers
and broccoli are tender (usually after about 10-15 minutes) add the can of
pineapple plus the rest of the juice and continue cooking on medium high heat
for another 5 minutes.
6.
Once pineapple
is heated through, serve the chicken/pineapple/red pepper/broccoli mixture over
a bed of brown rice.
One of my girlfriends and I
actually created this dish one evening about ten years ago when we wanted to
cook together for our husbands, and it’s been a staple in our house ever
since. It’s simple, quick, and light on
those hot summer nights!
