It’s time for
another installment of my One Dish Meals. Quick
and easy, and hardly any clean up! This
is actually one of Jacob’s favorites… he won’t eat the onions or green peppers,
but that boy loves sausage and
potatoes!
Prep Time: 15
minutes
Cook Time: 35
minutes
Serves 4
Use It
Large cookie
sheet with sides
Buy It
1 package link
sausage (I use Hillshire Farm Turkey Smoked Sausage)
6-8 baby red
potatoes
1 large green
pepper
1 large onion
1 large
zucchini
Olive oil
Rosemary
seasoning
Make It
1. Preheat oven
to 400.
2. Spray cookie
sheet with non-stick cooking spray.
3. Slice
sausage, potatoes, green pepper, onion, and zucchini and spread out on cookie
sheet.
4. Toss with
olive oil and rosemary.
5. Bake for 35
minutes. (I always pull mine out about halfway
through and toss everything with tongs so it doesn’t burn or get stuck
together.)
This meal is so delicious, and it's light so you feel full but not weighed down when you're done. It's also great because you can throw pretty much anything else in there to tailor it to your likes - squash, red peppers, asparagus, broccoli - the possibilities are endless!
